It’s based on a combination of melanzane alla Parmigiana (which uses breaded eggplant slices in place of chicken) and costelette Parmigiana.

It’s been around for over 100 years, and continues to delight food lovers all over the world.

Baked Eggplant Parmigiana

If you’re a fan of eggplant, this is a must-try dish! Served with a side of spaghetti marinara, it’s the perfect comfort food year-round… especially in the winter. A great alternative for those who don’t eat meat, and just as filling.
